150 gram rice vermicelli prepared to packet directions.
( to make them more manageable I cut them into shorter lengths once cooked then toss them in a little oil – they should be both dry and loose for successful stir frying)
200 gm picked crab meat
2 x egg omelette chopped into small pieces
2 x dried shittaki mushrooms, soaked then thinly sliced
2 eschallots thinly sliced
2 – 3 tsp curry powder
Heat 1 tblsp peanut oil and 1/2 tblsp sesame oil in wok until smoking
Stir fry mushrooms 1 minute
Add vermicilli and continue to stir fry until completely loose and heated thru
Add egg, crab and eschallots and stir fry till heated thru
Add fish sauce ( a little at a time until desired degree of saltiness is obtained)
Add 2 or 3 tsp curry powder and continue stir frying until cooked through
Noodles should be quite dry when cooking has been completed.
Stir frying process should take about 5 min
